Preheat oven to 350 degrees F. Blot skin of meat dry with paper towels, then drizzle olive oil over the chicken breasts. Rub dry seasonings over both sides and place on a wire rack (like cooling rack) over your baking sheet.
Bake for approximately 60 minutes, or until the internal temp reaches 165 degrees F. To crisp up the skin a little more, turn your oven to the broil setting for 1-2 minutes.
*Be sure to watch your chicken to make sure the skin doesn't burn. Remove from the oven and let cool slightly before slicing and serving
