Fried canned biscuits - if using these you would skip two steps and just start heating the oil. You can submerge as is or flatten 1 a bit, fill middle, and place a 2nd flattened biscuit on top. Seal sides and carefully submerge until golden brown and cooked in the center.
Homemade fried biscuits - In a bowl whisk together dry ingredients for biscuits. Put butter in freezer for 20 minutes, then shred with cheese grater into dry mixture. Use pastry cutter or hands to incorporate into shaggy mixture.
Make a well in the center and add milk. Use spoon or hands to incorporate JUST until it is mixed but no longer to keep fluffy. Dump on to cutting board very lightly floured and press with hands until it is 1 inch thick. Use biscuit cutter to press down into rounds.
Pour vegetable oil into Dutch Oven or deep pan about 2-3" high over medium high heat. Once it reaches 350 degrees carefully lower dough rounds inside for about 2 minutes or until outsides are lightly browned. Break one in half to ensure that is long enough to cook all the way to middle.
Set on a plate lined with paper towels to absorb excess oil. Then start the gravy if you want both.
Heat up butter in a skillet over medium high heat and add diced onions and ground sausages. Break apart and cook until browned. Use a spatula to remove into a bowl but leave grease in the pan.
Add flour and a pinch of salt black pepper. Whisk to create a roux. Whisk in milk and chicken broth. Cook until thickened. Add sausage and onions, stir and turn off so it continues to thicken. Serve.
