Wash potatoes, poke with a fork all over and set inside pot. Pour in broth. Dry chicken skin and rub with olive oil, then season outsides as you wish.
Set chicken with breast facing up on top of potatoes. Seal lid shut, seal steam valve shut and set to high pressure for 25 minutes or 6 minutes per lb. Allow for a natural release at the end which will take 15-20 minutes.
Lift lid, check internal temp to ensure it has reached 165 F. Shred meat or cut off bone and serve.
