Cook hard boiled eggs, cool and peel. Slice each one lengthwise in half. Pop cooked yolks out and into a bowl.
Use back of fork to crush them into a sandy texture. Add mayo, mustard, and bacon bits, salt and pepper to taste. Spoon mixture into small freezer bag and zip shut. Put into fridge to cool and firm up as you prep.
Add a few drops of gel food coloring into a cup with about 1 cup of water in each one. Mix and adjust until color is as deep as you want. Drop 1 egg white into each one and let it sit for about 5 minutes or until it is as deeply colored as you'd like.
Set on paper towels to absorb water when whites are colored. Then transfer to an egg plate.
Snip edge off of freezer bag and pipe the filling into the egg holes, serve.
