Best if these are brined overnight. If so that is all the seasonings you'll need. Alternatively you can coat skin with our turkey dry rub if you'd rather, quicker and just as wonderful. Do not do both, choose one.
Preheat oven to 325 degrees F. LIne baking sheet with non stick foil. Lift breasts out of brine, blot skin dry with paper towels and set on top of pan with 1 pat of butter on each or drizzle half your olive oil on top of each. Cover with non stick foil tightly.
Bake for 1 hour 30 minutes until thickest portion reaches 160 F. Then uncover, switch to broil setting and drizzle remaining olive oil or pat of butter on top of each one. (if you didn't add dry rub or brine sprinkle seasonings of choice on top now)
Broil for additional 3-4 minutes or until skin is nicely browned. Remove pan and cover with foil to keep warm for 10 min. of resting. Slice and serve.
