Blot outside of meat with paper towels to remove moisture. Mix dry rub seasonings in a dish. Use a pastry brush to brush vegetable oil onto both sides of the pork chops, then sprinkle on dry rub (or just salt and pepper on both sides) and place into an ovenproof skillet. (I like cast iron)
Set oven to broil, when heated set pan inside and cook pork chops on one side for 3 minutes. Flip over and broil for an additional 4 minutes or until an internal temperature of 145 degrees F is reached. Remove from oven, let stand to rest for 5 minutes before serving.
How long to boil pork chops - a small pork chop, or one that is 1/2" thick should be broiled for 3-5 minutes per side. A 3/4" pork chop should be broiled for 6-8 minutes per side. A larger, 1" thick pork chop should be broiled for 9-10 minutes per side.
