Add ground beef to a skillet and heat over medium high heat, stirring frequently until no longer pink. Drain grease and return beef to pan. Add ketchup, mustard and brown sugar. Stir and heat over medium low until hot. Taste and adjust as you'd like (want sweeter add more sugar, want wetter add more ketchup, more tang add more mustard)
Turn heat off and cover with a lid. Let stand until toast is ready.
Preheat oven to 450 degrees and place toast in a single layer on a baking sheet. Bake for 6 minutes, flip pieces over after 4 minutes.
Keep toast on the same side and spoon sloppy joe mixture evenly across all 8 warm toasts. Top with shredded cheese if desired and return to oven for 3-4 minutes or until cheese is melted. Serve.

Homemade Sloppy Joe Sauce
Combine 3/4 cup ketchup + 3 tbsp mustard + 2 tbsp brown sugar and add to your cooked and drained meat. Taste and adjust as you wish with a bit more of this or that until the flavor is just right for you.
