Mix all-purpose flour, water, buttermilk, salt and sugar (2 tbsp) in a bowl. Start mixing everything with a spoon, pour in olive oil now. If the dough is too liquid, add a little more flour. Knead soft but not sticky dough. Put it in a bowl and cover with cling film for 15 minutes.
For quick cooking, air fry the sweet potato (washed, dried, skin pierced with a knife or fork) at 360F for 25 minutes or until tender inside.
Peel the sweet potato, cut into pieces, add 1 tbsp brown sugar to it. Then mash thoroughly with a fork to get a puree. Cut the dough into two parts. Put one part under cling film so that it does not dry out. Cut the rest into 6-7 pieces.
Roll each piece of dough into a thin 2-2 1/2-inch diameter sheet. Place 1 tbsp sweet potato filling in the center of the sheet. Leave some space around the edges so you can pinch them.
Pinch the edges and put dumplings in a baking dish. Prepare the remaining half of the dough with filling too. Preheat the oven to 360 F. Make a sweet sauce using melted butter, brown sugar, cinnamon and water. Stir.
Pour the sauce into a baking dish and cover with foil, put in the oven and bake for 15 minutes. Remove the foil and bake for another 15 minutes. Serve dumplings with the remaining sauce over the top.

Air Fryer Sweet Potato Dumplings
You would need to make half of this to cook at a time. Use an oven safe dish that fits inside your air fryer basket. Use the same temperature and timing directions as above.
