boneless skinless preferred

pineapple chunks
14 oz., drained, juice set aside

bell pepper

soy sauce

Instructions
Add thighs to the bottom of the pot, overlapping least possible. Pour pineapple chunks, without juice, and chunks of bell peppers on the top.
In a bowl whisk together pineapple juice from the can with all other ingredients listed above to create a sauce. Pour this on top of the meat too.
Cook on low for 4-4.5 hours or until meat is tender enough to pull apart easily, or shred, with a fork. Serve on top of a cooked bed of rice.
