Preheat oven to 325, line baking sheet with foil and put rack on top. Spray rack lightly with non stick spray.
In a small bowl combine olive oil with dry ingredient seasonings. Rub on all sides of roast and sit on top of rack.
Bake uncovered for 4.5-5 hours or until it reaches 195 degrees F. Remove and rest for 15 minutes before shredding. Can toss with sauce if you like and serve.
