Lemon Bars with Cake Mix Recipe

Easy lemon bars with cake mix recipe with curd are delicious! Nobody will know these weren't homemade. Use boxed cake mix flavor of your choice to make the shortbread crust.

Ingredients

1 box cake mix yellow or white, 15.25 oz
1 egg
1/2 c butter melted
1 jar lemon curd 13 oz
1/4 c powdered sugar

Instructions

Preheat your oven to 350 degrees F. In a large bowl, stir together the cake mix, egg and melted butter.
Press the batter evenly into the bottom of a 9x12 pan (lined with parchment paper). Spread the lemon curd over top.
Bake for approximately 30-35 minutes, or until the edges are slightly brown. Remove from the oven and let cool completely before sprinkling on powdered sugar.
