In a deep bowl, mix all dry ingredients - flour, baking powder, baking soda, ground cinnamon, and sugar. In another bowl, whisk together the egg and melted butter.
Add buttermilk and lemon juice to the egg bowl, whisk until combined. Pour the liquid ingredients into the bowl with the dry ingredients. Stir just until combined, no longer.
You should now have a thick batter. Let the dough stand for 10 minutes. If the dough is too liquid, add some flour. If it's too thick, add buttermilk.
Heat a pan over medium heat, spray with non stick spray or add just a bit of butter so they don't stick. Pour a small amount of batter into hot pan for 2-3 minutes on each side. Flip when underside is browned.
When both sides are browned and middle is no longer wet, serve with fruit and syrup on top.
