Preheat oven to 350 F. Rinse and peel carrots. Lay on paper towels to dry outsides.
Place into a dish so they don't overlap, size will depend on how many you are cooking. Lay inside the pan.
Drizzle olive oil on top, then the honey, followed with seasonings. Bake for 30 minutes or until they are as fork tender as you'd like. Baby carrots should be checked after 20 minutes for tenderness.
