If your chorizo has a casing, slice and remove it and discard. Heat oil in pan. Place the meat in a large skillet over medium high heat when hot. With a spatula, break it up into small chunks as it cooks. Be sure to stir frequently so that meat does not burn.
Mexican chorizo - Continue to cook for 8-10 minutes (depending on how large your chunks are) or until it has more of a brown color and is crumbly (similar to ground beef, but smaller crumbles). It should no longer be wet or sticky.
Spanish chorizo is already fully cooked when purchased, so it only needs to be heated through. A few minutes of heating in a pan or incorporating it into a recipe is sufficient.
