Wash and remove debris from outside of potato skins. Dry off with paper towels to remove as much water as possible. Use a knife or fork to pierce each one 6 times all the way around.
Rub or brush just a bit of olive oil on the outside of the skins and can sprinkle on some salt as well at this time. Preheat oven to 375 degrees.
Tightly wrap each one with foil to seal shut. Place on a baking sheet and bake at 375 degrees Fahrenheit for 45 – 60 minutes or until knife inserted in the center goes in and out smoothly.
How to make baked potato skins crispy - Take out sheet, increase heat to 425 degrees. Remove foil, brush a fair amount of canola or olive oil all the around each potato and put back on baking sheet. Sprinkle them all with sea salt and heat for another 10 minutes or until skins are as crispy as you'd like.
