3bananasoverripe, mashed
Instructions
Preheat oven to 350°. In a medium size bowl, whisk together eggs and oil, then brown sugar and vanilla.
Mash 2 bananas and whisk into batter. Whisk in spices. In another bowl mix dry ingredients together. Grease and flour 2 loaf pans. Pour in batter, distributed evenly.
Slice bananas lengthwise as thin as possible. Place bananas on top of batter in loaf pan. You can do this to one or both loaves.
Bake for 40-45 minutes or until a toothpick or cake tester comes out clean. Cool on a wire rack for 10 minutes. Gently slide a knife around the bread, remove loaf, and place on wire rack until cooled enough to cut.
