Heat a non-stick skillet over medium low heat. Spray with cooking oil.
In a blender, add egg whites, xanthan gum, salt and pepper blend until fluffy. Pour 1/3 cup mixture into the preheated non-stick skillet.
Coat the bottom of the skillet with an even thin layer by moving the pan around so it coats the bottom. Cook until firmed and lightly browned 2-3 minutes, then flip to the other side for another 1-2 minutes.

* You can leave the binders out and just use egg whites with a bit of salt and pepper to make these with 0 carbs. Use same instructions to blend until frothy just be more careful when flipping as they will be very delicate and may rip.
