Set a deep pot or Dutch Oven over medium high heat filled 1/3 - 1/2 of the way full with vegetable oil.
* Optional but delicious. Once oil reaches temp. first drop in 10-12 peeled whole cloves of garlic for 2-3 minutes until they reach a deep golden brown but before turning too dark. Put on paper towels to absorb excess oil.
Rinse, dry brussels with paper towels. Cut ends off and slice in half on a cutting board. Wait until the oil reaches 375-400 degrees F before lowering down halved brussels with a slotted metal spoon. Add as many as will fit without overlapping and fry for about 3 minutes or until browned and crispy.
Lift out using the same slotted spoon and transfer on to a few paper towels to absorb excess oil. Sprinkle some of the garlic salt on top, cover with paper towels until next batch is fried until they are all done this way.
Toss with balsamic and bacon bits if desired before serving so they are all coated.
