Cranberry Banana Bread Recipe

Ingredients

cup
butter
room temperature

sugar
white granulated
1
cup
bananas
mashed
1/4
cup
milk
whole or 2% is best, or dairy free alternative (cashew milk is best for that)

eggs
at room temperature ideally

all purpose flour
2
tsp
baking powder
1.5
cup
cranberries
fresh, chopped into smaller bits
1/2
cup
nuts
pecans or walnuts, chopped, optional
Instructions
In a bowl mix together flour and baking powder, set aside. Preheat oven to 350 degrees F.
Beat butter until smooth, then add mashed banana, milk, sugar and eggs. Beat until blended.
Slowly incorporate dry ingredients. Scrape down sides until everything is incorporated well.
Fold in chopped cranberries and nuts. Lightly spray loaf pan with non stick spray or line with parchment paper.
Pour in batter and bake for 1 hour. Test with toothpick to see if middle is no longer wet. If not add another 10 minutes and test again.
Remove, allow to cool for 10 minutes, then remove from pan and set on cooling rack.
