This is how to make chocolate chip cookies made with pancake mix for dessert. You can add crushed nuts too or leave plain for sugar cookies. An easy way to make an old fashioned treat.

Instructions
In a large bowl, beat the butter, sugar, and brown sugar together until light and fluffy. Add in the egg and vanilla and continue to beat. Add in the pancake mix until combined. Stir in the chocolate chips. Chill the dough in a covered bowl in the fridge for 30 - 45 minutes to stiffen.
Preheat the oven to 350 degrees. Scoop the cookie dough into 1 ½ Tbsp sized balls and place on a baking tray about 2-3” apart.
Bake for 9-11 minutes, just until the edges start to turn golden. Remove and place cookies on a cooling rack to bring to room temperature.
Notes
Chewy cookies
Only bake 9 minutes (depending on size) until the outsides start cracking and middle no longer looks wet but still looks a bit underdone. Remove pan and set pan on cooling rack. Allow to cool completely on hot pan before removing.
Crunchy cookies
Bake for 11 minutes until entire top is cracking and golden brown. Cool on pan for 5 minutes, then transfer to cooling rack.
