Make 1.5 cups of rice in rice cooker. We use a rice cooker, linked above with a touch more than 3 cups of water and it turns out perfect.
When rice is done open the lid to let it cool just for a few minutes while you prep the other things. On a cutting board cut the pack of Chinese sausage in half, and slice into thin pieces. (put other half in ziploc in fridge so you can make another batch later in the week)
In a bowl whisk your eggs. Warm wok on stovetop over medium high heat. Add a drizzle of vegetable oil and then your whisked eggs when warmed. Use a spatula to move around to make small bits of scrambled eggs. Transfer this to a bowl and set aside.
Stove- Add your thinly sliced sausage pieces with a touch of sesame oil and fry until glistening and starting to shrivel on the outsides to signify it is cooked. Pour into a bowl and set aside. Air Fryer - Preheat air fryer to 400 degrees F and air fry for 2 minutes until crispy
** If you want to add frozen mixed veggies, heat until tender on stovetop or add to a microwave safe bowl with a bit of water and heat for a few minutes until tender to your liking. Drain, set aside.
Turn heat to low. Spoon in your cooked rice into the pan. Sprinkle in 1 of your fried rice seasoning, your sliced sausage and half your soy sauce. Gently fold together. * Add drained tender mixed veggies if you want to now.
Add your cooked eggs, rest of soy sauce and fried rice seasoning sprinkled on top. Gently fold together. Taste, add more soy if you'd like. Turn heat off and serve immediately.
