Instructions
Preheat oven to 350 degrees F while you prepare the batter. Put a silpat sheet on your cookie sheet or line with parchment paper so they don't stick.
Use a hand mixer or stand to mix all ingredients together until it is smooth and a bit fluffy. Scoop up a heaping Tbsp full of dough and place on prepared baking sheet with a few inches in between each one so they can spread out and not touch.
Bake for about 10 minutes or until they are all cooked to the center and no longer wet. Remove and place sheet on a cooling rack. (you'll make several batches this way until batter is gone) Leave on the pan until completely cooled.
Spoon your tub of frosting into a pastry bag or freezer bag with the corner snipped off so you can pipe into the middle. Carefully use a spatula to remove each cookie without breaking.
Pipe frosting on the bottom of one cookie, then gently press a second on top with flat side touching frosting. Serve and enjoy.
