Chop bell pepper and onion into small pieces. In a large skillet, begin to brown the breakfast sausage. Add the pepper & onion. Continue to saute until the sausage is no longer pink and veggies are slightly tender.
Remove from heat and set aside (drain any excess grease). In a bowl whisk together Bisquick, eggs, milk, oregano and a pinch of salt & pepper.
In a baking dish (9x11 or similar), spread the drained and cooked sausage mixture in an even layer. Sprinkle with shredded cheese. Top with the Bisquick batter.
Bake in a preheated oven at 350 degrees F for approximately 35-40 minutes or until middle is no longer wet. Remove and let cool slightly and firm up inside the pan before serving
