Add oil to a large ovenproof skillet over medium high heat until hot. Add pork and sear on each side, about 2-3 minutes per side, until browned. Remove pork from pan and set aside.
In the same skillet, add apples, brown sugar, cinnamon, nutmeg and butter. Heat over medium heat, stirring frequently for about five minutes until apples begin to get tender.
Return pork to pan, spooning the cooked apples to the top of them. Cover with foil and bake for 20 minutes.
Remove foil and top with pecans. Return to oven for 5 minutes or until meat reaches a safe 145F inside.
