Preheat the oven to 400 F. Rinse chicken leg quarters and pat dry to remove excess moisture on skin. Mix spices, herbs and salt in a dish. Brush chicken with olive oil on all sides, then sprinkle it with spices and salt.
Transfer the chicken quarters to a baking dish sprayed with non stick spray and place in the oven to bake for 20 minutes. You don't need to cover the top.
Flip the chicken quarters to the other side and bake for another 10-20 minutes (depending on how thick and large yours are). Check after 10 and see if at thickest part it has reached a safe internal temp of 170 degrees F.
When done remove, cover dish with foil and let sit for 10 minutes to rest. Then serve as is or with a brush of sauce on top.
