Instructions
Slice beef into thin strips, season with salt and pepper all over.
Defrost 4 frozen rolls (Rhodes yeast dinner rolls were used) per hot pocket, or can make smaller ones with 2 per but will need to dice meat instead of strips for just 2.
Smush defrosted rolls together and roll out into a sort of individual pizza crust size.
Place about 10 thin slices of beef in center with 1.5 tbsp (or so) of pate on top of that.
Preheat air fryer to 350 F for 5 minutes. Then fold top and bottom of dough over and seal.
Do not fold over ends as it will make dough too thick and not cook through, instead press ends together flat so they seal.
Spray inside of basket with non stick spray and lay 1-2 of these hot pockets inside with seams facing up. Brush egg wash on top.
Cook for total of 8 minutes, flip over and brush egg wash on top again after 4 minutes. Set on paper towels when done to absorb any juices from meat that may leak out so outside doesn't get soggy.
Brush melted butter on top at the end. Allow to sit on plate for 5 minutes before slicing in half and enjoying.
