We made the yummiest dessert the other night that we like to call cookie cup sundaes! It is an easy recipe that you can make with your kids, or serve when guests come over (it’s a real hit let me tell you)! As you well know I’m all about quick, easy, and oh so tasty recipes…..let me show you how to make these (you can thank me later)! 😉
If you follow me on social media at all you know how obsessed I am with my muffin pan (I seriously think I have made or tried to make everything in it)….so it is no surprise that this one involves my FAVORITE pan in the kitchen! I am sure you have one (I am guilty of having several in every size out there), and for this recipe you will need your regular every day muffin pan to start with and a few simple ingredients from your local store….so we went shopping.
We went to Walmart to pick up what we needed for our cookie cup sundae recipe and came at the perfect time because they were having a Blue Bunny ice cream demo…..of course we had to check that out! We had their vanilla flavor with berries and it was amazing. They said they would be back on June 4-7th with ice cream sandwiches and Wet Ones (what Mom could live without those) too. It was time to pop what we needed in our cart and head home!
We found the ice cream we tasted in the freezer aisle, now we just needed the sugar cookie mix for the base, some fruit, whipped cream and maybe some sliced almonds to create our sundaes. I have made homemade sugar cookies in the past but I was running behind that day and decided to “cheat” a little bit by grabbing a bag of sugar cookie mix in the baking section. 😉
Cookie Cup Sundaes
- 1 container of Blue Bunny ice cream we like vanilla bean for this recipe
- 1 bag sugar cookie mix or make homemade
- 1 bag sliced almonds
- 1 pkg. strawberries
- 1 pkg. blueberries
- 1 whipped cream
- Make sugar cookie dough. Spray muffin pan with non stick spray (even if it is a non stick pan), scoop cookie mixture into muffin tin cups (heaping tbsp. worth), press down with spoon or bottom of spice container to create pocket/cup, bake cookies, press down in middle of cookies again to make pocket/cup, cool, top with ice cream and toppings.
So first things first, we have to make the cookie cups. Spray the cups in your muffin pan with non-stick spray (yes, even if you pan is already non-stick). Make the batter for your sugar cookies and put a heaping tbsp. in each muffin cup. Then, clean and spray the bottom of a spice jar with non stick spray and push down in the middle of each dollop of sugar cookie mix to make a cup. Bake as directed (mine took about 10 minutes), and take out when they are still soft in the middle but brown on the edges as you see in the bottom left picture. Then, use the bottom of the spice jar again to push down in the center of each soft / cooked cookie to make the cup. Allow the cookie cups to cool a bit (can serve warm if you wish), and then top with your Blue Bunny ice cream and toppings…..everyone loves this recipe!
It is great just for a family dessert, but is also fun to create an ice cream bar with these cookie cups when people come over or for Birthday parties! Just make the cookie cups ahead of time, cut up some fun fruits and toppings, and lay it all out so everyone can create their own cookie cup sundaes. Your guests will be so impressed, and they will never know just how easy it was to make. 😉
