If you’re looking to go on a road trip or take your family somewhere that’s not too close but not too far (I always say 8 hrs. of driving ea. way is our max or I, oh yeah we, are in trouble)…..Ponderosa Resort right outside Zion National Park is a great destination! The 5 of us packed ourselves in our Tahoe last summer and took off to our “cabin in the woods!” I found this place when I saw a Groupon (of course)but couldn’t use it because it wasn’t good for the Summer. Nevertheless, it looked interesting so I checked into their website a bit further and OH MY GOODNESS we had to go there!
Not only did they have real log cabins to sleep in (2 full size bunks + pull out couch) but they had horseback riding, miniature golf, zip lining, quads, a pool w/a rock slide and beautiful grounds so the kids could just run and explore their hearts out!Guess what the BONUS was!!?? Although the Groupon was no longer valid, their every day prices were awesome! Just $89/night for the 5 of us to stay in a “cowboy cabin”……now that’s music to my Qponing ears!!
We had a blast doing all the activities listed above, rented a rhino to explore the grounds explored a bit one day, visited the North Rim of the Grand Canyon one day (1.5hrs. from there or so), and spent one day at Zion National Park!We never made it to Bryce Canyon National Park so we will have to go back, but that is close too. This is definitely a trip that my girls (and husband and I) will never forget! I highly recommend (my kids would too) this “resort” and all it has to offer.
Many kids love attending VBS programs, and parents love the programs many local churches offer during the summer time. Each one is a bit different in their styles and the programs they offer, some are free (others are very low in cost), and most all offer one during a particular week during the Summer.
I have compiled a list of local churches offering these wonderful programs (in no particular order). Many require that you register your children before school ends in order to save their place (the free programs fill up very quickly). If you are traveling to Disneyland you might want to stay the night. Depending on how far you live and how late you want to stay, many times it is well worth it to take full advantage of your time there and not have to make the long trek back home that same day. I always have a ton of leftover ham at Easter (and leftover turkey at Xmas), and usually half of it gets thrown out because we have had enough sandwiches and soup using it. This year I came up with this yummy (and super easy) way to make them into little “pockets” that everyone enjoyed!
Here is our fun and easy leftover ham recipe for the night / week after!
You will need:
1. Leftover ham, cut into small pieces (can use turkey too)
2. About 3/4 c. mayonnaise
3. About 3/4 c. swiss or mozzarella cheese, cubed
4. Crescent rolls (1 pkg. makes 8 which was enough for the 5 of us)
5. Dill, salt, pepper and thyme to taste (could add dried cranberries too)
Lay crescent rolls, spoon mixture & fold over.
All you do is cube the ham and cheese, add the rest of the ingredients and stir in a bowl. Then lay each crescent roll with the larger part of the triangle inside the muffin tin and the smaller end hanging out. Scoop the mixture inside the muffin cup, and fold the smaller end over the top and tuck it underneath a bit. Bake as directed on the crescent roll container (take out when browned on top), and waaallaahhhhh…..they were great!
